The pressure makes all the difference: Normally, German beer sits in tanks for four to six weeks to ferment and a certain amount of pressure is held back by a bung device to let the CO2 produced in fermentation naturally carbonate the beer. Our non-bung beer ferments for the same amount of time but ends up containing less carbonation, which creates a unique flavor. Non-bung beers are generally cloudy, light to amber in color, and offer a more intense malt and bitter flavor.
